70% of the olive variety is typically from the region of Calabria: Carolea. These olives give a fruity taste with hints of spicy and with apple and almond aftertaste.
30% of Athena is created with Pennulara, Borgese, Nocellara Messinese & Nocellara Benice, also typical from Calabria. These add notes of tomato and brings out the almond in Carolea.
